Abstract

Food preparation, kitchen organization and kitchen technique can be shown very well in videos. The article shows by way of introduction that popular kitchen tech­nique videos contain many errors from a professional-pedagogical perspective. The pre­sented survey of prospective teachers (N=30) of secondary schools for eco­nomic professions in the field of nutrition at the University of Teacher Education Tyrol on their use and assessment of kitchen technology videos shows that learn­ing videos are frequently used, but the students are hardly aware of the errors they contain. This was the reason for the development and production of kitchen technology tutorials as Open Educational Resources (OER).
