The main aim of this area is the development of molecular biological working methods in the food analysis in connection with protein analysis. The polymerase chain reaction (PCR) is the method of choice for the detection of genetical modification. The PCR leads to a specific, very sensitive and fast detection of genetically modified DNA. We develop qualitative and quantitative detection methods for the specific detection of GMOs with „real-time“ PCR. The point of main effort of the future work will be the development of further methods for the detection of genetically modified components in food, the indirect detection of allergenic food with the detection of specific DNA-sequences and the question of authenticity. Molecular biological working methods, especially the “real-time” PCR, lead to very good results in this area. The fast and sensitive detection of microbial contaminations in food and in food production is a further operational area of these techniques. Completed projects dealt with the detection of RNA virus in plants and wastewater and with the detection of meat and bone meal and fish meal in feedstuffs. Within the scope of a EU-project (Molspec-ID) we develop a qualitative detection system for duck, turkey and chicken and a quantitative detection system for duck and turkey.
