Abstract

Grapes were harvested in southern Styria on three different harvest dates (13th September, 24th September, and 2nd October) and two different harvest times (08:00 and 16:00) and crushed/destemmed to produce must. Must was valuated onsite for sugar content (°Brix), pH, and total acidity (g/L acid). The IBMP concentration was determined using solid phase microextraction in combination with Gas chromatography coupled with tandem mass spectrometry. All results were compared using statistical methods. pH and total acid depended on the harvest date did not vary with different harvest times. Sugar and IBMP concentration depended on harvest date and harvest time. Sugar concentration and pH increased with later harvest dates. IBMP concentration and total acid were highest on the first harvest date and lower on the following two. IBMP-concentration and sugar content were higher at the later harvest time (16:00). Riper grapes show a lower IBMP concentration.
