Heterocyclic Aromatic Amines in Meat

Heterocyclic aromatic amines are substances that are formed during the heating of meat. Some of them are mutagenic/cancerogenic. The aim of this project is to find out the reaction mechanism. Based on these results, a strategy can be developed by which the content of these potenitally dangerous substances can be kept as low as possible.
